Small Break
Hi all, there won't be food until the week of the 23rd. Please check back next week.

Sausages and sauerkraut
I miss the great sausages back home, but meatguy makes some really great ones, without added preservatives and salt. The sauerkraut has herbs, lemon, and green apple, along with a little extra sliced on the side.
I ate this same meal for lunch every day last week.

Breakfast Casserole
This is good, and weirdly it smelled like cheddar cheese while cooking. I guess my nose just remembers that breakfast casserole usually has cheddar, but this one certainly did not.
Ingredients: breakfast sausage, eggs, shredded yams.
Turkey and Gravy
My goal was to perfect a paleo gravy. Alas it wasn't exactly what I hoped, but it was really tasty. My issue was I couldn't get the coconut flour to not be grainy, but I'm going to keep working on this one.
The turkey was cooked in chicken stock, and served with ranch yams and carrots.
8g butter (one tab), coconut flour, chicken stock, thyme, water.
Hamburgers with yam fritters
The hamburgers had paprika, garlic, franks buffalo sauce, marjoram, and a dip of honey.
When the fritters were done, I made myself a snack.
Chicken meatballs
Ingredients: ground chicken, tomato, garlic, basil, thyme.
After the meatballs were finished, I threw the cauliflower in the meatball pan to cook them.

Roasted chicken with vegetables
Each chicken had 2 teaspoons of butter, 1 red onion, a head of garlic, and sunny in paris seasoning on the inside and outside of the skin. I cooked it for a really long time over low heat to release the fat.
Once the chicken was cooling, I used the same pan and juices to cook the broccoli.
Each serving is half a chicken and roasted vegetables.
Both the beef and this week's chicken are pretty good, and they will make a regular rotation in the menu!
Italian cooked Beef
Italian cooked beef with enoki mushrooms and oven marinara.
The beef was marinaded in the spices below, then braised in the cooking liquid from the oven marinara. Ingredients in the oven marinara, garlic, onions, tomatoes, and thyme.
Perhaps that is a little hard to read: fennel, savory, white pepper, parsley, garlic, dried thyme.
Once the meat was done cooking in the liquid, I threw the mushrooms into it to cook. There is a pretty thick pile of mushrooms under the beef.

Tacos!
Last week I fed my husband tacos, and he ate 8 in one sitting. He admitted it was probably too much, clearly he misses home (at least the tacos) a fair bit.
Ingredients: ground beef, onions, and half penzey's taco seasoning and half a low salt taco seasoning.
Steak
Steak, salt, pepper.
Asparagus and lemon pepper blistered on a high heat.
That's all. Simply delicious.
Chicken burgers
My husband and I used to make turkey burgers in the states all the time. Ground turkey is hard to find here, but the recipe translated to chicken easily.
Ingredients: Ground chicken (half breast meat, half thigh), ginger, chives, granny smith apples, coconut oil.
Served with a summertime favorite of watermelon.
Herb chicken with slow roasted tomato
Chicken: Chicken breast (giant size!), Penzey's no salt spice mixture, olive oil.
The tomato is seasoned with salt and lemon pepper, and cooked at a low temperature for a very long time.
Pork and Pineapple lettuce wraps
Ingredients: Pork, pineapple, coconut oil.
Peppers: Red and yellow peppers, coconut oil, cooked on a high temperature to blister.
Chicken wings
I love chicken wings. Mostly I love the sauce, and the wings are just a vehicle for sauce.
Ingredients: Wings, franks red hot sauce, coconut oil.
Japana-pumpkin egg cups
I roasted the kamboucha, then sliced for the egg cups. I thought it was a nice, delicate flavor. I used the peels too, because they tasted good and were pretty tender after such a long time roasting.
Warm Bok Choy and Beef Salad
Ingredients per serving: 300g Beef, 2 heads bok choy, 1 peach, 1/3 red onion, bean sprouts, coconut oil.

Week of July 16
July 16th is a national holiday, Ocean day, and we will be observing it by going to Okinawa.
Deliveries for next week will take place Tuesday night and Wednesday night.
You do not need to order by Thursday of this week, as I will have to source all items from close by rather than ordering the week before. Therefore ordering before the end of the weekend will be fine.

Grapefruit and avocado salad
The grapefruit looked great today! So what was supposed to be salmon and green vegtable turned into lemon garlic salmon with grapefruit and avocado salad, very citrusy.
each serving of grapefruit and avocado salad: 1 grapefruit, half an avocado, 1/4 of a red onion, young ginger, and a drizzle of olive oil.

Crispy coconut chicken
Ingredients: Chicken, coconut flour, coconut oil, salt (1/8 tsp for two breasts, it really was just missing something before the sprinkled salt).
Blueberry pork with celery and bok choy
I love celery as a cooked vegetable.
The pork is simply marinated in frozen blueberries and oil, and the bok choy and celery has lemon pepper and olive oil.

Big Texas Strawberry chicken salad
Wow, the dressing on this is good. I guess that is what happens when you just blend fruit.
I will always separate the lettuce from the other ingredients so that it stays fresh.
Ingredients: Roasted chicken, lettuce, tomatoes, cucumbers, bacon, frozen strawberries, olive oil, fig vinegar, lemon pepper.
Vegetable washing
I always wash my vegetables, sometimes my husband does not, and he thinks it is no big deal. I went peach picking earlier this week, and the gentleman helping us made a huge deal about rinsing and scrubbing every peach that we ate the peel of. I asked my friends why and they mentioned that to get perfect fruit, you need a lot of pesticide.
Well, today I bought some typically dirtier vegetables, like lettuce and spinach, and I wanted them really clean. So I googled about vinegar washing. Once I saw the first batch of vegetables after they were cleaned, I promptly chopped and threw in every vegetable I bought, or planned to use, to soak in the wash AND the cold water rinse.
So now I pledge to you: I will always wash all the fruits and vegetables in more than just a water rinse.

Wow, this much dirt was on the vegetables.

Yeah, the water that was once clear looked like this.
Beef curry with Cauliflower
Since rice is a no-no and most curries are thickened with flours or corn starches, I figured some people might be craving a little bit of paleo curry, with enough meat and veggies in a portion to fill a paleo stomach.
![]() |
Ground beef will never look pretty in a picture. Ingredients: Beef, tomatoes, eggplant, onions, garlic, ginger, hot curry powder, curry paste, bay leaf, tumeric, garam masala.

The rice substitute: roasted cauliflower and olive oil.
Egg Cups
We are on our third week of egg cups for breakfast. First week was bacon and caramelized onion. Last week was asparagus and lemon; I don't even like asparagus and I thought they were good. This week is spinach with bacon.
The recipe took a bit of tweaking that first week. Vegetables need more salt, and anything bacon needs none. It took one batch of bacon and onion cups to realize that one, so I will admit that about 25 of the first week's eggs were way too salty. Sorry.
